This charming restaurant in Valdemorillo, which plays with a simultaneously rustic and modern aesthetic, was awarded a Repsol Sun in 2023 and a Michelin Star in the 2025 Guide. Manu Franco, its chef-owner and former sports journalist, favours all the flavours of the Sierra de Guadarrama, local meats, aromatic plants that grow in the area (such as thyme or the digestif liqueur cantueso) and home grown vegetables.
In this delightful restaurant, decorated with a mix of rustic and modern details, the chef has devised a tasting menu called Capricho, which attempts to recreate the different meals of the day, offering three versions: Pequeño Capricho, Capricho and Gran Capricho.
